ATTENTION! 24th of November!!!


Let's all celebrate today's day! 
It has been exactly 41 years since archaeologist Donald Johanson has unearthed Lucy - a nearly complete skeleton of a female hominid in Ethiopia. Hominids are our ancestors and are nearly the same to homo sapiens today. 
The female skeleton that was unearthed got its name from The Beatles' song, "Lucy in the Sky with Diamonds."
Lucy lived approximately 3 million years ago and her human species had quite small brains, yet they already walked on two legs like us. 
Lucy belonged to the Australopithecus afarensis, which roamed Africa about 4 million years ago. 
Lucy was discovered in 1974, November 24th, so let's all take a round of applause of Lucy- the female skeleton that changed our view of history!

Spring Zubkova composed a piano piece!


It has been a few days since Spring Zubkova, from Spring Lifestyle Magazine, had recorded her own original Piano composition.
The emotional piece is called "Come To Life" and is a piano version of her country-pop song, "Come True."

Gluten-Free Warming Christmas Sweet Bread Recipe!

This is a delicious recipe of one of my very favourite Christmas sweet breads...And guess what! It's GLUTEN FREE! Yay!
This recipe belongs to my Mother and her gluten-free baking recipe books. 

Ingredients:

  • 60g of runny honey
  • 4 eggs (for a vegan version, eggs can be substituted with 1/2 tsp. to 1 tsp. with XANTHAN GUM.)
  • 200g of butter, or oil (either coconut or extra virgin olive)
  • 250g of almond meal (is the same as almond flour or can be achieved my processing 250 grams of almonds in a food processor.)
  • 1 tsp or bicarbonate of soda or BAKING POWDER.
  • A few spoons of lemon juice, or any vinegar.
  • Orange or lemon zest
  • Poppy seeds or nuts and/or seeds to top (optional).
Method:
Preheat the oven to 180 degrees CENTIGRADE or 325 degrees FAHRENHEIT. Gas mark: 3. 

Whisk the honey or eggs in a bowl. If you are using Xantham gum instead, then added it too. 
Mix butter and almond meal into the egg mixture. 
Dissolve the bicarbonate of soda with lemon juice or vinegar and stir into the batter. 

Mix in the remaining ingredients and pour into the desired cake tin. Top or sprinkle with seeds or nuts.
Bake for approximately 20-30 minutes, or until a bronze-coloured crust formed. 
Cool on a wire rack for five minutes and enjoy this GLUTEN-FREE treat!
